Brownies

Brownies,  yummy, chewy, fudgy, spongy,  nutty brownies. Super combo with tea or coffee.  This is something many of us will fall for,  specially chocolate lovers.

Ingredients

1 cup all purpose flour,
1 cup chocolate powder,
1/2 cup olive oil,  (can also use unsalted melted butter),
1 cup half crush nuts ( almonds, walnut, cashews),
1 cup sugar,
1 cup milk,
1 tbsp baking powder,
Cup measures-- 200ml

Process

Preheated oven 180 degree.
In a large mixing bowl add sugar and olive oil, keep stiring,  as sugar melts add seived flour,  chocolate powder amd baking powder. Keep mixing,  add milk to give batter consistency.  Lastly add nuts.
Grease tray,  dust flour every corners of the tray (helps to come out easily). Put batter,  tap the tray allow it to spread equally.
Put in Convection mode for 15 mins.  Do check with a toothpick. If need can again run for 5 mins. Allow it to cool, enjoy.

Murg taka-tak

Murg taka-tak is tangy n chatpata dish, goes ga-ga with tandoori roti. I tried its mutton version in a punjabi restaurant and in love with the taste.  So here its my version with chicken wings..

Ingredients

400gm chicken wings, 
2 big onion ( cut in 4 halves), 
2 capsicum (cut in diced), 
10-12 black pepper corns ( semi crushed), 
2 green chillies (chopped) , 
4-5 garlic pods ( crushed), 
1 tbsp chaat masala ( can substitute with 1 whole lemon juice), 
Salt, 
White oil.

For wings marination

1 tbsp vinegar/ 1 tbsp lemon juice, 
1 tsp red chili powder, 
Salt, 
3-4 garlic pods (paste/grated).

Process

Marinate chicken wings with above listed ingredients for 15 mins. 
Heat oil in kadai shallow fry the wings ( 4-5 pcs at a time). Keep the fried wings aside, in a same oil add crushed garlic and onions fry till onions become semi fried,  add capsicum and keep sautéing. Now add fried wings, crushed black pepper corns,  chopped green chilli,  chaat masala.  Give all a good toss,  wait for 1 min again toss. Yummy chatpata wings ready to go.

Tofu tawa masala

Tofu tawa masala is a veg recipe goes really well with hand made breads. Tofu is made up of soy milk so its healthy and protein packed too.

Ingredients

For marinating
250gm tofu ( cut into cubes),
2 tbsp hanging curd,
1/2 tsp garam masala powder,
1/2 tsp turmeric powder,
1/2 tsp red chili powder,
Salt.

For gravy
1/4 tsp cumin seeds,
1/2 tsp cumin powder,
1 tomato (pureed),
1 big onion chopped,
2 green chillies chopped,
1 tsp kasuri methi,
Chopped cilantro,
Salt (acc to taste),
Cooking oil.

Process

marinate tofu in hanging curd, garam masala powder, turmeric powder, chilli powder, salt...grease tawa place them fry tofu cubes bith sides for a minute. Now keep aside.

Heat oil in a kadai add cumin seeds and onion fry for a min add tomato puree, chopped green chilli, cumin powder, kasuri methi, add 1/2 cup water bring into boil add fried tofu cubes. As the gravy thickens add chopped cilantro.
Enjoy with chapati or paratha.

Green peas patty

Green peas patty or vada pao. Another yummy healthy veg snack and  a good tummy satisfier too..

Ingredients

250gm green peas,
1 inch ginger ( cut into two pcs),
2 green chillies,
1/2 cup dates ( deseeded),
1 tsp turmeric powder,
1 tsp cumin powder,
1tsp Coriander powder,
1 tsp lemon juice,
1/2 tsp whole cumin seeds,
A pinch of hing / asafoetida,
Cilantro chopped,
2 tbsp besan,
Salt ( acc to taste),
Oil/ ghee (for frying).

Process

Heat oil/ghee in a kadai add cumin seeds as it crackles,  add peas,  hing,  ginger cuts,  chillies, mix it.  Now add dates,  turmeric-cumin-coriander powder, and salt. Add 1/2 cup water and cover it for 5 mins.  After done let it cool for 3-4 mins. Make this mixture a paste in a grinder add chopped cilantro and besan.  Give it cutlets or patty shape.
Shallow fry in oil or ghee. Enjoy it with a bun and evening tea.

Soya cutlets

Soya-lets or soya cutlets is a lip smacking parter with your afternoon tea. Its a pure veg recipe..

Ingredients

For 5 cutlets..
1 cup Soya granules,
2 potatoes ( boiled),
1 big onion chopped ( optional),
3 tbsp bread crumbs, but
1 tsp ginger paste,
1/2 cup semi boiled each grean peas and sweet corn,
3 pcs green chillies chopped,
1 tsp garam masala powder,
Salt ( acc to taste),
Oil ( for shallow fry).

Process

Soak the soya granules in a luke warm water for 10 mins.  Squeeze n take out the soya granules in a mixing bowl add all the above given ingredients,  except bread crumbs and oil. Mix it well with your hands,  shape it like cutlets. Coat each cutlets with bread crumbs.
Now heat a tawa /griddle 1/2 tsp  for each cutlets and shallow gry both the sides..
Serve with sauce n Enjoy with your evening tea.

Grilled basa fillets

Fish has always been bong's comfort food.  My hubby ( i call him cat) is a die hard fish fan.  So every other day i enjoy try different fish recipes. Its a starter recipe.

Ingredients

250gm basa fillets ( cut into cubes),
1 tsp lemon juice,
1 tsp red chilli powder,
3-4 garlic pods ( crushed),
Salt (acc to taste),
1 tbsp Olive oil/ cooking oil.

Process

Marinade the basa fillets with lemon juice,  chilli powder, salt and garlic..

Gas process..  Heat a tawa grease it with oil fry fish pcs both side. When you will see roasting coat above,  then its done.

Microwave process.. Preheat oven 180 degree. Grease the racks arrange the fish pcs grill it for 2-3 mins each side..
You can cover the racks with aluminum foil this will help you take off the fish pcs easily..

Homemade Biryani masala

There's no need to rush to super market each time to get prepared biryani masla. You can make yourself at ur home, i bet it will be much hygiene and authentic one.. So from now on any day is a Biryani day..

Ingredients

1.   shah jeera ( 1 tbsp)

2.   Cumin seeds/ normal jeera ( 1 tbsp )

3.   Cardamom/ elaichi ( 15 pods)

4.   Cloves / laung / lobongo ( 15 pcs)

5.   Nutmeg / jaiphal ( 1 nos,  break into pcs)

6.   Fennel seeds / saunf / mouri ( 1 tbsp)

7.   Bay leaves / tej pata (4 nos)

8.   Mace / javitri ( 3-4 nos)

9.   Star anise / chakro phool ( 3-4 nos)

10.  Black pepper corns / golmorich ( 1 tbsp) 

Process

Dry roast all the above listed spices separately in a medium flame till you get the roasted aroma.  Allow it to cool, grind it coarsely not full powdery.  Keep it in a air tight jar.

Liver pepper fry

One of my hubby's all time favorite dish. Its a good starter.. Spicy n tangy..

Ingredients

500gm chicken liver,
1/2 tsp salt,
1/2 tsp turmeric powder,
1 tsp red chilli powder,
1tsp lemon juice,
1 tsp black pepper sauce,
1 tsp half crush pepper corns,
2 big onions (cut into big size),
4-5 garlic pods (smash and take the juice),
3 tbsp mustard oil.

Process

Marinade liver with lemon juice, salt,  turmeric powder,  chilli powder and garlic juice. Heat oil in a yok and fry it (each time little amount).  Plz dont forget to cover yok with a lid as liver bursts too much. after frying discard the oil and take fresh oil,  heat it and fry onions till they are translucent. Now add pepper sauce saute onions.  Add liver and pepper powder,  salt and give it a good toss. Add lemon juice and its done.

Carrots paneer sandesh

When you have loads of carrots n you are looking for a variety of ways,  this can be the solution.  Simple and easy sweet recipe.  Trust me you will love it..

Ingredients

1 cup grated carrots,
1 cup grated paneer,
1/2 cup sugar,
1/2 can condensed milk,
1 tsp cardamon powder,
2 tbsp ghee,
1/2 tsp ghee (for greasing),
Dry fruits (optional).

Process

Heat a pan,  add ghee and lightly fry grated carrots.  You will see soon the colour changes and water frim carrots are dried,  then add paneer and give a good stir. Now add sugar and condensed milk mix all well and lastly add cardamon powder.  Soon grease a tray with ghee n thoroughly soread the mixture.  Allow it to cool and set.  Garnish with dry fruits.
