Thai Basil Rice

A simple fried rice turned out to a heavenly flavorful just by adding basil leaves and oyester or fish sauce. Thai preparation with few ingredients and that too quicky. Its among One of our favorite.

Preparation time: 15 mins
Cooking time: 10 mins

Ingredients:
Serves for: 2

250 gm rice (basmati/steam),
100 gm shredded chicken,
4-5 garlic cloves ( roughly crushed),
3-4 green chillies ( roughly crushed),
3 tbsp oyester sauce/fish sauce,
3 tbsp soya sauce,
Handful fresh basil leaves,
2 tbsp white oil,
1 tbsp sesame oil/ olive oil,
Salt.

Process:

Cook the rice, let it cool.
In a crusher (hamol dista) crush garlic cloves and green chillies together.
Heat both the oil, add crushed garlic and chilli. Don't over fry.
Add shredded chicken, soya sauce.  Sauté it well.
Add rice,  salt basil leaves and oyester or fish sauce.
Give it a thorough mix, of course with light hands.
Cover for little while,  let the basil spread its smell.
Turn off gas. Yay, its done.

Chilli Fish

Are you a sea fish lover?  Chilli Fish are very common in restaurants menu. Why dont you try your hands, cooking it in your kitchen.
Sea fishes are easily available now a days.  I used Basa fillets for this recipe. Its easy,  super yumm and exact restaurant ones..

Preparation time: 10 mins
Cooking time: 15 mins

Ingredients:

For fish marination:

500gm basa fillets (cube cut),
1 egg,
2 tbsp all purpose flour,
1 tbsp corn flour,
1 tbsp soya sauce,
1 tsp black pepper powder,
Salt.

For sauce:

15-20 garlic pods (chopped),
2 inch garlic (chopped),
1/2 cup spring onion (chopped),
3-4 green chillies (chopped),
2 tbsp tomato sauce,
2 tbsp oyester sauce,
1 tbsp soya sauce,
1 tbsp chili sauce,
2 tbsp white oil,
1 tbsp sugar,
1 tsp sesame oil (optional),
Salt.

Process :

Marinate fish cubes with above mentioned ingredients.
Heat 3-4 tbsp white oil and shallow fry both sides. 4-5 pcs at a time.
Keep aside.
In that same oil add 1 tsp sesame oil.
Add chopped garlic,  ginger fry them.
Next add chopped spring onion and green chillies.
Next add all the above mentioned sauce one by one and keep stirring,  add  1 cup water for gravy and sugar.
Add fried fish pieces mix with sauce (with light hands),
Fish pieces coated with sauce, Turn off the gas.
Garnish with spring onion and roasted sesame seeds.

Enjoy with steam rice.

Curd Fish

Another fishy story.. Catla or indian carp with curd. Its a bit tangy in taste. Piping hot rice and fish curry,  bongs will die for this combo. Today i tried this with peas. Lets see how it goes..


Ingredients

4 pcs catla fish (100 gms each),
1 tsp turmeric powder,
1/2 tsp red chili powder,
1/2 cup hanging thick curd,
1 small size onion ( julienne cut),
1/2 tomato ( chopped) optional,
1 cinnamon,
2 cloves,
2 cardamom,
1 dry red chilli,
1 bay leaf,
Peas ( handfull, optional ),
1 tsp sugar,
Salt,
Mustard oil,
Cornflour (pinch).


Process

Beat curd with sugar.
Marinate fish pieces with salt and turmeric powder. Heat 3-4 tbsp mustard oil in a wok.  Fry the fish pieces bit golden. Keep aside.
In the same oil give the whole spices,  red dry chilli and bay leaf,  allow to splutter.
Add onions,  fry them translucent.
Add tomatoes and peas mix well.
Now add beaten curd,1/2 salt,  1/2 tsp turmeric powder, 1/2 tsp chilli powder.
Add 1 cup water allow to boil and add fried fish pieces.

Tip..  As it comes to required gravy add a pinch of Cornflour, the gravy will not look curdled.  It will bind the gravy.

Catla Malaiwali

Bongs all times favorite fish curry with a twist of milk. A rare combination, but came out as awesome one. Catla is a very common household fish name. So today here is Milky Catla or Catla Malaiwali...

Ingredients

4 pcs catla fish (100 gms each),
250 ml milk (full cream preferable),
1 tbsp turmeric powder,
1 tbsp red chili powder,
1 tsp garam masala powder,
3-4 garlic pods (chopped),
1 inch ginger ( grated),
1 tomato ( chopped),
2 green chillies,
2 cardamom,
2 cloves,
1 cinnamon,
1 red chilli dry,
Salt (according to taste),
Mustard oil.

Process

Marinade fish pcs with 1/2 tsp salt and  1/2 tsp turmeric powder.
In a bowl pour the milk add grated ginger,  1 tsp turmeric powder,  1 tsp red chili powder,  1 tsp mustard oil, mix all and keep it aside.
Heat 3-4 tbsp Mustard oil in wok, fry both the sides of fish pieces till little golden. Keep aside.
In that same oil give cardamom, cloves,  dry red chilli,  cinnamon and chopped garlic, after a while add chopped tomato n sliced green chili.
Pour the full milk mixture and bring it to boil.
Add fried fish pieces in the gravy and boil it till creamy consistency.
Now add salt to the gravy ( add salt in the beginning will spoil the milk).
Lastly add garam masala powder and done.

Those who dont like garlic can opt it. Enjoy with steamy rice.

Onion Paratha

Running out of time yet something delicious you are looking for,  this is the perfect one.  Easy and quicky onion paratha, can be paired with curd or any simple sabji..

Ingredients

For 5 parathas,
2 cups Whole wheat flour,
2 big sized onions (finely chopped),
2 green chillies (chopped),
1 tsp garam masala powder,
1 tsp chaat masala powder ,
1/2 tsp salt,
Oil/ghee (for frying and kneading dough)

Process

Knead the flour with salt and 1tsp oil/ghee. Divide in five balls.
In a bowl mix the chopped onions,  chopped green chilli,  garam masala powder and chaat masala powder.
Take the kneaded flour ball,  shape like bowl with hand, pour 1 tbsp onion mixture. Seal it and roll it with rolling pin with the help of flour dust.
Heat tawa or griddle fry both sides of paratha with oil/ghee.

I served it with potato and peas sabji.
