Fish In Teriyaki Sauce

I am a die hard fan of Asian style cuisine. During my pregnancy i so craved for  chinese cuisine, that my doc adviced me to try homemade chinese foods. And there begins my journey of preparing authentic chinese foods thats too like restaurants.
I am having a huge collection of all kinds of chinese sauces. Sauces play a big part while making delicious chinese foods. Some sauces are also very easily can be prepared then and there.

Today i tried this Teriyaki Sauce, which you cant get in supermarkets, but one have to make it by mixing some other flavoured sauces. So quickly jumping to the recipe.

Preparation time: 10 mins
Cooking time: 25 mins

Ingredients:

For fish marinating:
500gm boneless fish fillets (cube cut),
1 tsp garlic paste,
1/2 tsp white pepper,
1 egg,
1 tbsp cornflour,
1 tbsp all purpose flour,
Salt.

For sauce:
1/2 cup soy sauce,
1/4 cup water,
2 tbsp sweet rice wine,
2 tbsp powdered jaggery,
1/4 cup sugar,
1 1/2 teaspoons minced garlic,
1 1/2 teaspoons minced ginger,

For Glaze:
1/2 tbsp cornstarch
1/4 cup water

Process:

Marinate the fish fillets with all above ingredients. Keep aside for 10mins.
Heat oil in a wok fry the fish pieces as pakoras, check the doneness. Keep aside.
Same oil sauté 2 big onions (cube cut).
On the other hand in a sauce pan mix all ingredients of sauce. Mix till sugar melts.
Put the gas on,  bring the sauce to boil. 
Prepare the glaze by mixing water and cornstarch and mix with sauce.
Add the fried fish and onions. Mix all with sauce.
Serve with any rice or noodles.

Coriander Paneer

When bong cooks wishes you all A Very Happy New Year. Have a blessed 2016.
Enough of eating out, now really wanna have homemade food.

Paneer or cottage cheese cooked in coriander paste. A really time saving recipe that too a fingerlicking one.


Preparation time: 5 mins
Cooking time : 6-8 mins


Ingredients:

250 gms Paneer/cottage cheese (cube cut),
2 tomatoes roughly chopped,
8-9 garlic pods,
7-8 black pepper corns,
2 green chillies,
Handful cilantro/coriander leaves,
1 tsp turmeric powder,
1/2 tsp gram masala powder,
1/4 tsp ajwain/carom seeds,
Salt and sugar acc to taste.


Process:

Make a paste in grinder of the following: pepper corns, tomatoes, garlic pods, cilantro/coriander leaves, green chillies.
Heat white oil in wok.
Add ajwain/carom seeds as tadka, pour the above made paste.
Add salt,  turmeric powder, garam masala powder.
Cook and bring it to boil, till oil comes up.
Add paneer pieces,  mix with masala.
Add half cup water, allow to boil.
Serve with hand tossed roti.

Poached Egg Curry

A big shout to all egg lovers. Though it's nothing new many must have tried this on thier own kitchen i did too. But today thought to share it in my blog.
Easy recipe cooked in less time. Jumping straight to the recipe.

Preparation time 10 mins
Cooking time 15 mins

Ingredients:

4 whole eggs,
2 potatoes peeled and cut into halves,
1 bay leaf,
2 big onions chopped,
2 tomatoes chopped,
1 tbsp ginger minced,
1 tbsp garlic minced,
2-3 green chillies,
1 tsp turmeric powder,
1 tsp cumin powder,
1 tsp coriander powder,
1 tsp red chilli powder,
1 tsp garam masala powder,
1 tbsp chopped fresh coriander leaves,
Mustard oil (preferably),
Salt,
Sugar.

Process :

Heat oil in any scattered wok or skillet, fry the potatoes. Keep aside.
In the same oil fry Bay leaf, garlic minced, chopped onions. Till translucent.
Add chopped tomatoes, turmeric powder, cumin powder, coriander powder, chili powder,  salt n sugar. Mix all thoroughly.
Add 2 cup water cover and allow it to boil. Now with  spoon make spaces, and one at a time Crack eggs carefully in the spaces.
Cover it again.
Sprinkle garam masala powder.
Take out in a flattened plate garnish with chopped fresh coriander leaves.

Chicken Rezala

Festive season is on. We are all set and ready with our plans and attire and makeup kit... And where there is durgapuja and bongs ; two things are must; adda and bhuribhoj.
So its time for some yummilicious recipes to try out and enjoy with our family. Chicken Rezala is one among them, its a mughal cuisine. It can be paired with paratha or smoking hot rice. But I bet you will try it again and again.

Preparation time 1hr (with marination) Cooking time 1 hr

Ingredients

500 gm chicken pcs,
250 gm hung Curd,
4 tbsp Onion paste
1 big Onion (cut into thick rings),
2 tbsp Ginger paste,
3 tbsp Garlic paste,
5-6 Green Chillies,
1 tsp garam masala powder,
1 tbsp Poppy seeds, 9-10 Cashew nuts,
3 tbsp Ghee,
1 tbsp white oil,
3 tbsp Sugar,
Salt (according to taste) ,
4 pcs each Cardamon and cloves,
2 pcs cinnamon,
8-9 Black Pepper corns,
3 pcs Dry red chili.

Instructions

Marinate chicken with hung curd, salt, 2 tbsp onion paste, 1 tbsp ginger, 1 tbsp garlic paste. Keep aside for 1hr.
Soak poppy seeds and cashew nuts for 30 mins, make thick smooth paste.
Heat ghee in a deep bottom pan. Add whole garam masalas, let them splatter. Add onion, ginger and garlic paste saute them in a low flame. Keep stirring after every minute. Don't fry them brown.
After the pungent smell is gone, add the chicken pcs along with the marination. Add green chillies.
Mix all well. Cover with lid and let it cook in a low flame.
After a while add poppy seeds and cashew nuts paste. Mix and again cover. Do stir in between. This process will take 40 mins approx.
After the chicken is cooked, add garam masala powder.
On other side in a pan heat white oil, add whole dry red chillies and onion rings, sprinkle salt. Saute them and add in chicken.
Chicken Rezala is all ready to serve.

Kacha Lonka Mangsho

Full festive mood, last minute shopping and plannings for do's and only do's during our very own Durga Puja. Its Sunday and its incomplete without Mangsho and Bhaat.
Today its a simple bong recipe Kacha Lonka Mangsho. Its an old recipe from our grand mom's age. Chicken cooked in lots of raw and fresh chillies. Its an easy one with very handy ingredients. Lets jump on to the recipe..

Preparation time 10 mins
Cooking time 40 mins

Ingredients:

500gm Chicken,
12pcs Fresh and raw green chillies ( use chillies according to tolerance),
2 big sized Onion ( julienne cut),
9-10 Garlic cloves,
2" Ginger,
1/2 cup Cilantro /dhone pata,
2 small Cinnamon,
4-5 Cardamom,
2 tbsp lemon juice,
Mustard oil,
Salt and sugar.

Process:

In a grinder, make a paste of ginger, garlic, lemon juice, 2 tbsp mustard oil, cilantro, 6-7 chillies.
Marinade chicken with half of above made paste.
Heat mustard oil,  add cinnamon,  cardamon and slit 2-3 green chillies.
Add onions and 1 tsp sugar fry in low flame. Add half of the rest made paste.
After the masala is cooked, add marinated chicken and salt.
Cover it. Do keep stirring after every 5-7 mins. If want gravy, can add 1 cup water at this stage.
After the chicken gets soft and tender, and oil is oozing from the corner.
Switch off the flame. Its done.

Do keep your plate ready with steamy white rice.

Oreo Molten Lava Cake

Its sunday,  after lunch sitting with family watching movie. My sweet tooth is literally bothering me for something really chocolicious n yummy. How about molten lava cakes. But i never tried it before so thought to give it a chance.

Preparation time 5 mins + 30 mins (for inner chocolate making)
Baking time 5 mins

Ingredients:

For 200gm cake,
1/4 cup any chocolates (Cadbury silk i took),
6 pair Oreo biscuits,
1/2 tsp baking powder,
1/2 tsp olive oil/ butter,
1/2 cup milk.

Process:

For inner filling,
heat a pan add chocolates and 1/4 cup water. Melt the chocolate, shift in a bowl. Freeze it for 30 mins.
For cake batter,
Crush oreo biscuits to powder in a mixer grinder,  add milk and baking powder.
Grease pan with butter/olive oil, pour half batter.  Add two scoops of frozen chocolates. Again cover it with rest batter.
Microwave for 5 mins. Allow it to cool.
Demould and enjoy.

Instant Bread Utthapam

What's in breakfast? Early morning a BiGG question.. No to same boring sandwich, garlic toast and omelette toast. Something healthy and tasty so that i easily can give to my lil monster.
Here Google always plays a good role. And yes i got it,  Instant Whole Wheat Bread Utthapam.

Preparation time 5-7 mins
Cooking time 20 mins

Ingredients:

For batter,
6-7 whole Wheat breads,
1/2 cup sour curd,
1/2 cup semolina/ rava/ sooji,
1/2 cup rice flour,
Salt.

For topping:
3 tbsp grated carrots,
1 medium sized onion (finely chopped),
1 tbsp cilantro (chopped),
Sweet corns (less than hand full, optional),
2 chillies (chopped).

For greasing pan:
1 tbsp white oil,
2 tbsp water.

Process:

Soak the bread pieces in little amount water for 3 mins. Press between palms so that extra water is out.
In a mixer grinder,  add soaked bread pieces,  semolina,  rice flour, salt and half cup water. Make batter consistency. If needed can add more water. The batter must be not too thick, not too runny.
Mix all the toppings in a bowl.
Heat tawa/ griddle /sauté pan, 1 tsp  of oil and water grease. With a laddle pour batter. Normal poori size.
Add the toppings. Cover with a lid.
After 1 min,  flip other side. Cover again and done.

Serve with chutney or ketchup.
